I made this at home tonight. And oh my was I surprised at how well it turned out. Kale has been the new superfood for quite some time now, but I couldn’t make my way around it. This recipe solves that. I’m all about it now!
16 oz kale
1 lb turkey kielbasa or smoked sausage cut into bite size cubes
1 15 oz can great northern beans
3 medium potatoes
14.5 oz can diced tomatoes
3-4 cans water
4 chicken bouillon cubes
1 medium onion, chopped
2 tbsp. Olive oil
1 tsp. Garlic powder
2 bay leaves
salt and pepper to taste
Heat oil in a deep pot over medium heat. Add onions, potatoes and sausage. Cook for about 5 minutes stirring frequently.Add garlic, bay leaves and kale. Allow the kale to wilt for about five minutes. Stir, then add more kale. Repeat this process until you have added all your kale. Add remaining ingredients and bring to a boil. Reduce heat and simmer about 30 minutes.
Serves 6 – you’re Total prep time about 45 minutes
